As of Sunday, August 18th, the former HSBC building on the corner of Park Street and Unity Street will be home to artisan dessert joint CowBee.

Owned by Circencester couple Adam and Nicola Sztuka, the original plan for CowBee was to open in June to make the most of the summer. But while it may have taken longer than expected, those with a sweet tooth now have another Park Street dessert venue to try.

CowBee joins the likes of Swoon, Mrs Pott’s Chocolate House, Flavalanche and Kaspa’s Desserts, firmly cementing Park Street’s reputation for sugary confections still further. But CowBee, say the owners, will be offering something a bit different to the rest.

They’ll be combining milk from local farms and honey from Adam’s own bees (hence the name) to create ice creams, cakes, waffles and other treats made in-house – including gluten-free and vegan options. They promise that ingredients will be carefully sourced – and locally, where possible – and with a real focus on their coffee, I’m expecting a good brew…

Judging by test opening pics shared on their Instagram feed, CowBee has a trendy diner vibe, with touches like lavender in mini milk urns on the tables and yellow neon signage on the walls. I can’t wait to head over and see what it’s all about for myself!
