Wahaca Bristol opening date confirmed as Thursday, July 30th

Wahaca has today confirmed that it will bring its award winning style of Mexican market eating to Clifton, Bristol when its new restaurant opens its doors on Thursday 30th July. The restaurant will be located at Unit 5 Maggs House, formerly the home of Butlers.

The Wahaca menu will offer a selection of street food dishes, such as the signature Pork Pibil tacos (£4.10), British chorizo & squash quesadillas (£4.25) or MSC British crab and avocado tostadas with chipotle mayo (£5.25), which are perfect for sharing. Also available on the menu will be Bigger Plates to enjoy all to oneself, such as Summer vegetable enchiladas with grilled courgette, summer corn and cactus folded in corn tortillas and soaked in a gently smoky Pasilla de Oaxaca & crème fraiche tomato sauce (£7.95) or a British bavette steak, marinated in a pasilla rub, served with grilled cheese, green rice & smoky meco salsa (£10.50).

Since opening in 2007, Wahaca has flown the flag for proper tequila, that is, the 100% blue agave sort that earned the name ‘elixir of the gods’ in Central America. Along with its smokier, peaty cousin mezcal, varieties of the spirit will be a mainstay on the drinks menu, including the essential Classic Margarita, with freshly squeezed lime (£6.95) and twisted classics including the new Wahaca Colada; golden rum with pineapple and coconut (£7.95) – a perfect accompaniment to long summer nights. Also available will be wines by the glass (from £4.40) and of course, Mexican beers by Corona, Pacifico and Modelo (from £3.65).

For Wahaca, sustainability is of the utmost importance, and all ingredients are sourced as locally as possible to home, or transported with care for the environment. On the Bristol menu the refried beans will come topped with a sobrasada made nearby at Trealy Farm and the new tostada uses the first MSC-certified crab in the UK. Through their work with suppliers like Severn and Wye the Wahaca team continually push the boundaries on exciting, sustainable seafood options for their menus. Where specialist ingredients have to be delivered from Mexico, the approach is to buy direct from local co-operatives that support local farming communities.

Their attitude to sustainability will be incorporated into the restaurant design, through the use of ultra-sustainable building materials and the latest efficiency technologies, part of Wahaca’s ambition to be ever more eco-friendly. The 160 cover restaurant’s interiors will follow Wahaca’s commitment to original site-specific designs. Wahaca has always showcased street and graffiti artists work in its restaurants through commissioning the world’s best to take over the spaces and leave their mark. In Bristol, Wahaca has invited one of the original pioneers of the city’s renowned urban art scene, Will Barras. Will graduated from Bristol’s UWE University and became known worldwide for his inclusion in the 1999 publication of Scrawl, and later for the cover of Street Sketchbook. Will is considered one of the UK’s most influential and respected street artists and is known for his representations of fluid movement, unique narrative-driven composition, and line work.

Since the inaugural Covent Garden site, Wahaca has won numerous awards for quality, sustainability and design; including Sustainable Restaurant Group of the Year 2012 and 2013, Best Pop-up from the Restaurant Bar and Design Awards, the Observer Food Monthly Award for Best Cheap Eat in the UK, and the title of one of the ‘UK’s coolest brands’.

Wahaca Bristol will open on Thursday 30th July and accommodate walk-ins and reservations. Bookings will be taken online from 1 July 2015.
