This may be a bit of a student-style recipe, but it’s perfect for those nights when you fancy something quick, easy and sweet! Follow the recipe and you’ll be faced with a rich, microwaved chocolate cake, with a centre of melted peanut butter. Enjoy!
This recipe makes two mug cakes.
Ingredients
– 75g of plain flour
– 4 tbsp of caster sugar
– 4 tbsp of cocoa powder
– 1/2 tsp of baking powder
– 60g of butter, melted and cooled to room temperature
– 1/2 tsp of vanilla extract
– 120ml of milk, brought up to room temperature
– 2 tbsp of smooth peanut butter
Method
1. Mix the flour, caster sugar, cocoa powder and baking powder well in a medium bowl. Make sure that there are no lumps and that everything is well combined.
2. Stir in the melted butter, vanilla extract and milk, and whisk until you have a smooth batter.
3. Split the batter between two microwave-safe mugs. To the centre of each mug, add a tablespoon of peanut butter, pushing it down until the top of it is flush with the top of the batter.
4. Place each mug on a microwaveable plate, and cook individually in the microwave. Ours took just under 2 minutes each in a 700W microwave – adjust timings based on your microwave’s power.
5. Grab a spoon, and enjoy!
