How many of you are taking part in Veganuary this year? Huge numbers of people across the UK are going vegan – or if not fully vegan, then cutting down their animal product consumption – for January, and numerous Bristol food and drink venues have increased their vegan offerings this month. One of those places is Bristol institution Pieminister.
Adding to their existing vegan pies (Chooks Away! and Kevin, which are both Vegan Society Registered), the Evergreen pie is all about the leafy greens and beans. Filled with kale, spinach and edamame, all cooked up in a ginger, garlic and lime paste, it’s a pie that promises to pack a punch on the flavour front.
The new Evergreen vegan pie is available from Pieminister throughout January, and the team has hinted that it may return permanently in the spring if it proves popular.
‘There’s nothing lacking about our new pie, Evergreen’ says Co-founder and MD, Tristan Hogg. ‘Packed with the greenest greens and zesty aromatic ingredients, it’s the perfect antidote to the excesses of the festive period. And it’s guaranteed to give you a warm feeling inside, as we all know that meat-free eating is good for our health, and our planet’.
And whether you’re vegan or not, it’s pretty delicious. While the pastry is thinner than that of Pieminister’s non-vegan range, it holds together just as well when cooking, and has plenty of flavour.
Thanks to the garlic, ginger and lime, it smells incredible – and when you cut it open, it’s absolutely packed with its vibrant green filling. And with a combination of the firm, creamy texture of the edamame beans and the softer earthiness of the kale and spinach – plus plenty of ginger zing – it’s a hearty, filling pie that proves that plant-based food can be tasty, filling AND satisfying.
