This August, a brand new restaurant concept is coming to the Mercure Bristol Brigstow Hotel on Welsh Back in the form of Buttermilk & Maple.
Replacing the former Ellipse Restaurant and Bar, Buttermilk & Maple promises (according to their Instagram bio) “a dose of Melbourne café charged with New York nightlife”. We don’t have a huge amount of info about the venue yet: all we know is that it’s a brand new brand from the Splendid Restaurants Group (the guys behind the likes of Absurd Bird in Bath), and will be positioned as an all-day brunch venue, with the bar offering driven by cocktails and craft beers.
