While it’s clear that spring’s on its way, we’re still having those miserable, cold, rainy evenings where all I want to eat is comfort food. And, for me, stews, soups and casseroles fit firmly into that category.
The #LivePeasant campaign from Simply Beef & Lamb embraces dishes such as these, encouraging home cooks to back the peasant food trend and cook easy, slow, one-pot meals (involving beef or lamb, of course!) that take their inspiration from all over the globe.
The campaign – running in conjunction with quality standard Red Tractor – features a variety of recipes, all of which can be found here. It was hard to decide which to try first, but in the end, it was the lamb, vegetable and lentil soup with cabbage that won – a healthy, simple and nutritious recipe that I could make in advance and enjoy for lunches throughout the week.
