91 Ways to Build A Global City and Grow Bristol are holding a free event on 5th September called “Talking Tilapia” – a sustainable and delicious fish. Tilapia is now being farmed in the city by Grow Bristol. It has huge potential in terms of meeting local residents’ demand for sustainable fish and has up until now been largely overlooked.
The event will start at 2.30pm at the Lab Space on the Harbourside. Demonstrations will be held from Joe Wheatcroft of Source to show people how to descale, gut and fillet the fish. And a selection of people from the 91 Ways project will be showing us how to cook with tilapia. The fish is widely used in Asian, African and American cuisine but not European and so those who have lots of experience and a wealth of family recipes will be showing us how best to use it.
91 Ways is a project which aims to connect the 91 different language communicates of Bristol together through food. And Grow Bristol is a new urban farming enterprise – developing innovative and sustainable ways of growing food in the city for the benefit of all.
Dermot O’Regan from Grow Bristol says: “Tilapia is the second-most popular farmed fish on the planet and so we wanted to team up with 91 Ways and other partners across Bristol and show it off. Grow Bristol’s wider vision is that urban agriculture contributes to making Bristol a healthier, happier and more prosperous and sustainable city and farming tilapia locally can certainly help us do that!”
Grow Bristol’s site on Feeder Road will be opening in Autumn so this is a sneak preview of what the new market gardening concept (where they will grow ‘fish and greens’; tilapia and microgreens, herbs and salad leaves) can deliver.
