Bristol-based pop-up burger bar Burger Theory has been on the Bristol street food scene since spring 2013, cooking up burgers for hungry customers. They actually started in April 2012 back in Brighton, when founder Rory Perriment came back from a stint of travelling, itching to get into the food business. With experience of managing busy kitchens and bars and inspired by the cuisine experienced on his travels, he concocted a basic menu, rallied a crack team of burger flippers and launched in late spring at the Brighton and Hove Food Festival. Two seasons, a lot of hard work and a huge number of burgers later, they are moving on to their next big plan…

This autumn, Burger Theory are setting up shop in well known music venue and pub The Golden Lion on Gloucester Road. The opening date is set for October 18th with a launch party starring ska band Shoot The Moon and DJs, with free food samples on the night, along with 50% off any burger purchased and free entry into the venue.

But what about the burgers themselves? Well…expect innovative recipes and flavour matching, ethical sourcing of produce and a “work should be fun” attitude. The menu (click here to tempt your taste buds…) features meat from Buxton Butchers, cheese from Dorset’s Leopard Dairy, many of their vegetables from The Community Farm and 36hr proven soft buns from Joe’s Bakery. We like the sound of the “Pork Of The Town” (pork, chorizo, parmesan with basil, parsley and sundried tomato pesto), and the “Haba-oh-no” (beef, lime and habanero burger with after burn cheddar and chilli jam). Those following a gluten free diet will also be happy to know that gluten free buns are available. Prices range from £5 to £8.50, with sides including chips, cheesy chips, coleslaw and onion rings also available.
