Live Below The Line 2013: Day Two

This is tough. There’s no denying it. And day 2’s breakfast was a bit of a fail.

After making the gnocchi the previous evening, I had the brainwave of making a third of it into potato pancakes, which I kept in the fridge to cook for breakfast on the morning of day 2. Opening the fridge in the morning, I found that they’d gone a horrible grey colour and there was no way we were going to cook anything that looked like that!! So, unable to do anything else within budget, we just each had a boiled egg for breakfast. Oh, and 200ml of milk for 10p. Nice.

Lunch was leftover gnocchi, with a sauce made from frozen mixed vegetables, butter and a quarter of the jar of red pepper and feta paste that we’d found reduced to 20p in Asda. It wasn’t too bad, actually, and cost just 30p in total. Pretty filling too.

For dinner, yet more frozen mixed vegetables, this time mixed with half a carton of passata, a few Smart Price dried herbs and some dodgy 81p-for-500g bacon, again from Asda’s Smart Price range. We bulked this up with 100g of rice each to fill us up – at 49p for 2 portions, we came in below budget, and so I had a glass of milk as my evening treat for another 10p. That’s dinner for 30p. Who’d have thought it was possible?

All of this was topped up throughout the day with plenty of tap water…and I’m really not a tap water fan – I hate the taste!
