The Star and Dove team are set to visit food history experts at Hampton Court Palace on the 8th October in a quest to translate a Tudor feast menu that dates back to 1520. Their unorthodox yet brilliant take on their cooking has attracted the attention of Heston Blumanthol and acclaimed food historians alike!
From the outside, The Star and Dove – nestled at the foot of the rolling hills of Totterdown, Bristol – could be mistaken for an everyday neighbourhood tavern.
On stepping inside, guests will be comforted by the warm and friendly ambience of the bustling tavern. Should they venture upstairs, they will be astounded by the highly unusual yet brilliant concept of ancient dishes on the menu in ‘The Dining Room’.
The Team at The Star and Dove comprise top chefs Matt Duggan, Tim Denny and Leigh Pascoe who describe their cooking as ‘historical vision with a modern approach and technical excellence’.
All corners of Britain are reflected in the menu. Olde English delicacies like the egg custard douchete can be traced to the Coronation of Henry IV in 1399!
Every dish can be dated back and credited to the best cook books and significant food events in history.
The Welsh Salt Duck (currently on the menu) is particularly significant as it comes from First Principles of Good Cooking, a book written by Lady Llanover, one of the first women to write a cookery book in Wales in 1867.
The team recently wrote to Heston Blumenthal requesting his professional opinion on the best way to enrich their already impressive food offering.
They were delighted to receive a response communicating that Heston is also “fascinated by historical dishes and very interested to read about The Team’s research into historical recipes”.
This forms the basis of Heston’s menu at his London restaurant Dinner by Heston Blumenthal.
Heston has promised to make a beeline for The Star and Dove next time he’s in Bristol.
