Barbecues aren’t just for summer! Rather than the standard overly-charred offerings that us Brits are used to, however, you’ll soon be able to enjoy an authentic pit smoked offering from the team behind Bristol’s fantastic Grillstock BBQ & Music Festival.
The team will be taking over the Trethowan’s Dairy pitch at St Nicholas Market this week (week commencing September 3rd), and will spend the week installing their pit smoker and carrying out the refurb.
Fans of Trethowan’s fear not: while the brand will be focusing more on their wholesale efforts, they’ll also be working closely with the neighbouring Source Food Hall on their cheese counter. Their last day at St Nicholas Market is on Tuesday, and they’re offering 15% off all cheese before then.
The team plan on opening the Grillstock-branded venue as early as September 10th, with the official opening mooted for the 21st.
There will be no burnt burgers and singed sausages on offer here: expect hickory and fruit wood pit smoked babyback ribs and pork shoulders, served with their signature coleslaw. Ever considerate of the lunch time crowd, the ribs will either be served as a full rack, or stripped and in a wrap or on a roll for ease of eating.
Three to four times a week, the team also plan on offering specials, which will include the likes of gravy dipped brisket rolls, ox cheeks, grilled tri-tip beef sandwiches, and brisket chilli – cooked in the smoker.
With the likes of the Pitt Cue Trailer and The Rib Man proving popular in London, it’s great to have something similar coming to Bristol – and with the experience and following of the Grillstock team behind it, I’m convinced that it’ll be a success. Roll on September 10th…!
