Charcuterie, originally created as a pre-refrigeration method of preserving meats, is Castellano’s speciality, having begun his training to be a charcutier in Italy, where he grew up, at the age of just 14. He sells his cured meat products not only at his premises in Fishponds, but also at various farmers’ markets around the city.
We were lucky enough to enjoy a charcuterie board at Vincent’s All Things Pig Dinner last weekend – a rich and flavoursome sharing platter of saucisson, coppa, jamon, pâté de campagne and pâté en croûte. I’ll definitely be heading to the Wednesday Farmers’ Market on Corn Street this week to stock up…
If our experience is anything to go by, then those who book a place on April 20th are in for a treat. The evening begins at 7pm at Rosemarino in Clifton (on the site of the old York Cafe), and costs just £20 per head – places are limited, so book quickly!
On the night, you’ll get to taste some of Vincent’s creations while he explains the art of the charcutier. And if that’s not enough, then Rosemarino will be providing plenty of wine to accompany the meat!
